38 year-old Semillon vines from Shan'tell vineyard in the Yarra Valley, near Dixon's Creek. Grown on their own rootstock, the vines have been managed for the last two years under ecological management practices.
Ten days of whole bunch carbonic maceration followed by an extra four days of skin contact and the wine is a little denser and more structured than last year. All of the same florals and flavours of last year- musk, dried apricot, spice- but heightened. the long growing season and sunshine really shine through. A lightly salty flor tang on the finish.
